There are many things that we can do to improve our health. Obviously we need to avoid destructive habits like smoking. Moderate exercise is important. Really important, however, is eating the right kind of food. Fruits and vegetables contain valuable antioxidants that protect us from degenerative diseases such as heart disease, cancer, Alzheimer’s disease, macular degeneration (blindness), and even aging. Free radicals are molecules that are missing an electron in their outer shell. Because of the missing electron, they are unstable and highly reactive, and they go around stealing electrons from neighboring molecules, damaging them and turning them into free radicals. These new second-generation free radicals then repeat the process and a chain reaction forms as more and more damage is caused by each generation of free radicals. The cell damage caused by this process is called oxidative stress. It is similar to what happens when metal oxidizes or rusts.
So where do free radicals come from and how can they be stopped? Some come from cigarette smoking and other forms of pollution—in fact, the reason smoking is so dangerous is that each cigarette generates more than a quadrillion (1,000,000,000,000) free radicals that go rampaging around inside our bodies. However, even if we did everything right, we would still be exposed to free radicals. They are an inevitable consequence of living. Free radicals are created whenever we breathe in oxygen and use it to create energy. Scientists estimate that every cell in our body is attacked by free radicals 75,000 times a day. If it weren’t for antioxidants, we would all immediately self-destruct.
Antioxidants neutralize free radicals by donating one of their own electrons to the free radical. However, unlike other molecules, an antioxidant does not thereafter go on a rampage to replace its missing electron and hence it stops the destructive chain reaction dead in its track. Examples of antioxidants include vitamin C, vitamin E, and beta carotene, among others.
Antioxidants are primarily found in fruits and vegetables and that is why we need to eat lots of fruits and vegetables—five to nine servings a day, according to the experts. However, according to a recent US government survey, only about 2% of the population is eating an optimal diet. And even if you are eating five to nine servings of vegetables a day, you may still not be getting all the nutrients your body needs.
